This is a coffee “huevo”, a shell that literally breaks in your mouth to reveal its contents. It was conceived from the innovative technique called “sferificación”, invented by the Catalan chef Ferran Adrià.

This technique works by wrapping coffee inside a thin, transparent edible film. A sip of coffee becomes a sort of yolk which is to be savoured as it pleasantly melts in the mouth.
